PORK MEATBALL AND RICE NOODLE SOUP

SOUP INGREDIENTS 4 cups chicken stock (Massels brand is onion and garlic free for low FODMAP) 1 cups water 2 teaspoons soy sauce 2 spring onions sliced in half 2 teaspoons minced ginger salt and pepper MEATBALL INGREDIENTS 1 cup pork mince 1 1/2 teaspoons soy sauce 1 teaspoon chinese cooking wine 1 teaspoon cornflour 1/4 teaspoon sugar 1/2 teaspoon sesame oil 1 teaspoon minced ginger 1 spring onion finely sliced (green section only for low FODMAP) 1/2 pack cooked rice noodles 1. Combine all soup ingredients in a large pot, cover with lid and bring to a boil. Reduce to a simmer and leave for 25-30 minutes, then remove Spring onions. 2. Meanwhile combine all the meatball ingredients in a bowl and roll into small balls. 3. Bring the soup back to the boil then carefully add the meatballs and cook for ten minutes then add the cooked rice noodles and serve.
