CAJUN CHICKEN, PUMPKIN AND APPLE SALAD

1/4 kent pumpkin, cubed 2 diced chicken breasts 1 tablespoon Cajun seasoning 500g baby spinach leaves 1/4 cup diced chargrilled capsicum 1/4 cup sun dried tomato strips 3 tablespoons sliced black olives 2 green apples, peeled and thinly sliced 1/4 cup pine nuts 1. Spray a baking tray with oil and spread out the diced pumpkin. Roast in a preheated 200 degree Celsius preheated oven for 15 minutes. 2. Combine diced chicken and Cajun seasoning in a frying pan. Add salt and pepper to taste and cook on a medium heat. Set chicken aside when cooked through. 3. Combine spinach, capsicum, tomato, olives, pine nuts, chicken and pumpkin then serve. Note: This salad will also keep for a few days in the fridge
