GINGER AND SOY CHICKEN WITH RICE NOODLES

Chicken 1 chicken breast thinly sliced 2 teaspoons minced ginger 1 1/2 tablespoons soy sauce 1/2 tablespoon honey 1 teaspoon minced garlic salt pepper Noodles rice noodles 1/4 cup diced spring onion 2-3 tablespoons soy sauce 1 teaspoon sesame oil 1. Mix sliced chicken, ginger, soy sauce, salt and pepper in a bowl. 2. Cook chicken over a medium heat then set aside. 3. Place rice noodles in a boiling pot of water for 5 minutes, or until they have just softened. 4. Drain water and add spring onions, soy sauce and sesame oil, mix over a low heat. NOTE: To make this recipe low FODMAP friendly do not add the garlic and honey.
