CITRUS CHICKEN WRAPS

1 chicken breast thinly slices Zest and juice of 1 lemon Zest and juice of 1 lime 1 teaspoon fish sauce 2 tablespoons soy sauce Wraps (can replace with gluten free) Bean sprouts Carrot thinly sliced into matchsticks Spring onions sliced in half 1. Combine chicken, lemon, lime, fish sauce and soy sauce in a bowl and place in the fridge to marinate for at least an hour and a half. 2. Very quickly cook the chicken over a medium heat, until just cooked. 3. Lay a small handful of the bean sprouts, carrot matchstick and 2 pieces of spring onion on the side of a wrap. Add some slices of chicken and roll up. Continue to do this with the remainder of your ingredients. 4. Heat some oil in a frying pan and place the wraps in with the folded side down. Cook until golden and then flip over. 5. Serve with sweet chilli sauce or soy sauce. Note: For some extra flavour try adding lemongrass to the marinade. You can also add some cooked lemon rice to the wraps.
