BEEF ENCHILADAS

mall pack of beef mince diced brown onion 1/4 diced capsicum 1/4 cup enchilada sauce or salsa Handful of grated cheese (I used lactose free) 1. Heat a little oil in a frying pan and add mince, onion and capsicum and cook until brown, then mix through salsa or sauce. 2. Spoon mixture in the middle of a wrap (I used multigrain) then roll up and place on a greased baking tray. 3. Spoon a small amount of salsa or enchilada sauce on top of wraps and sprinkle with cheese. 4. Bake in a preheated 200 degree oven until cheese is melted. NOTE: I also added a clove of garlic when cooking the mince and served with guacamole
