Sweet Potato with Spinach and Chicken

1. Cut a small sweet potato in half and baked in a 180 degree preheated oven for 40 minutes, until soft. 2. Dice a small chicken breast and leave to marinade for 15 minutes with chilli powder, cajun pepper, garlic and smoked paprika. 3. Fry chicken until cooked through and add 2 cups of spinach, cooking until it just begins to wilt. 4. Scooped out a small amount of sweet potato and fill with diced chicken and spinach.
