This recipe can be made lactose free by replacing the cheese and milk with lactose free products. It can also be made gluten free by replacing the flour with a gluten free version. 1 finely diced brown onion 1 cup finely chopped broccoli 1 cup finely diced carrot 2 cloves crushed garlic salt and pepper 10 eggs 1 1/2 cups milk 1 cup grated cheese 2 tablespoons mayonnaise 1/2 cup self raising flour salt and pepper 1. Heat a tablespoon of oil in a frying pan and add the onion, cook for two minutes then add the broccoli, carrot, garlic, salt and pepper and cook until vegetables are soft. Set aside to cool. 2. Whisk eggs in a bowl, add milk, cheese, mayonnaise, flour, salt and pepper and whisk well. 3. Mix through vegetables and then pour into a greased baking tray, you can grate some extra cheese over the top at this point. 4. Cook in a 180 degree celsius preheated oven for 40 minutes, or until a knife can be inserted and comes out clean. Note: You can add extra vegetables, ham or bacon. These ingredients are just one example of how you can make this delicious quiche.
