ONE POT TOMATO AND BASIL PASTA

3 tablespoons oil 2 diced chicken breasts 250g pasta Handful fresh basil 1 cup halved cherry tomatoes 1 small diced eggplant 1 cup diced capsicum salt and pepper 2 teaspoons minced ginger 1 tablespoon paprika 1 teaspoon oregano 1 teaspoon ground cumin seeds Pinch of chilli flakes 2 tins crushed tomatoes 1 cup water 1. Add oil, chicken and a pinch of salt and pepper to a large pot and cook for three minutes. 2. Add all the other ingredients and mix, then cover with a lid and bring to the boil. 3. Reduce to a simmer and leave for 10 minutes then serve.
