UNI-BUM'S BEEF WELLINGTON

2 carrots, finely diced 1 brown onion, finely diced 1/2 a zucchini, finely diced 1/4 capsicum, finely diced 1/2 tablespoon minced garlic 2 teaspoons mixed herbs salt and pepper to taste 500g beef mince 2 eggs Puff pastry 1. Preheat oven to 175 degrees Celsius. 2.Heat a small amount of oil in a frying pan and cook carrots, onion, zucchini, capsicum, garlic, salt and pepper. 3. Cool vegetables then combine with the raw mince and one egg. 4. Whisk the remaining egg and brush along the sides of the pastry then take a portion of the mince mixture and place along one side of the puff pastry. 5. Roll the pastry and press to seal. 6. Place in preheated oven and cook for an hour, until golden. NOTE: If you can not eat gluten, replace the puff pastry with gluten free puff pastry. You can also try adding different vegetables and herbs.
