SIMPLE SATAY CHICKEN WITH BROWN RICE

1 tin coconut milk 1/3 cup peanut butter 3 tablespoons sweet chilli sauce 3 tablespoons lime juice 2x chicken breasts thinly sliced and cooked 1 1/2 cups cooked brown rice 1. Heat coconut milk on a low heat, add peanut butter, sweet chilli sauce and lime juice and whisk until thoroughly combined. 2. Spoon sauce over the chicken and serve with brown rice. NOTE: You can also try this marinade for the chicken. 1 cup yoghurt (I used lactose free) 2 teaspoons curry powder 1 tablespoons cumin 2 teaspoons coriander Pinch cayenne pepper 1. Mix the ingredients together and mix with chicken. 2. Refrigerate for at least 30minutes. 3. Cook on a medium heat, then serve with satay sauce and brown rice.
