NACHO BOWL

Gluten free, lactose free and egg free.

Beef mince 1 clove crushed garlic (or garlic infused oil for low FODMAP diet) 1/2 tin corn 1/4 green capsicum diced 1/4 cup diced spring onion (I only used the green part to make it low FODMAP friendly) 1/2 tin diced tomatoes 1/2 teaspoon oregano 1/2 teaspoon basil Salt and pepper Serve with: 1/2 cup basmati rice 1 teaspoon ground cumin seeds Gluten free corn chips Cheese (I used lactose free) Lime 1. Cook mince with garlic or garlic infused oil for two minutes on a medium heat. Add corn, capsicum and spring onion, cook for 3 minutes. Stir through diced tomatoes and herbs and leave to simmer for 10 minutes. 2. Combine rice with 1 cup of water, ground cumin seeds and a pinch of salt and cook until done. 3. Serve with gluten free corn chips, sprinkle with cheese and squeeze lime over the top.
