DAIRY AND EGG FREE PANCAKES

2 cups plain flour 4 teaspoons baking powder 2 teaspoons sugar 1/4 teaspoon cinnamon

2 cups milk (I used soy milk, but you can use lactose free or normal milk) 1/4 teaspoon vanilla essence 3 tablespoons water 3 tablespoons canola oil 1. Combine dry ingredients in a bowl, then mix in the wet ingredients. 2. Heat a frying pan and melt a teaspoon of dairy free spread (or butter) then spoon in small amounts of the mixture to form pancakes. 3. Cook until the pancakes bubble, then flip over and cook on the other side until golden. Topping ideas: Dairy free cream Lemon juice and sugar Maple syrup Mixed berries Banana Passionfruit Soy ice cream
