COCONUT ICE-CREAM BITES

1L vanilla ice-cream (I used soy ice-cream) 200g chocolate (I used dairy, egg and nut free chocolate that can be purchased from Woolworths or Coles) 2tblsp vegetable oil 2 cups shredded coconut 1. Line a slice tray with baking paper and place in freezer. 2. Beat ice-cream in a bowl using an electric beater until just soft. 3. Spoon into the slice tray and flatten, then freeze for 5 or more hours. 4. Remove from freezer and slice into small bars, then return to freezer on a baking tray for an hour. 5. Melt the chocolate and mix with the vegetable oil, let cool completely. 6.Dip an ice-cream bar into the melted chocolate and roll in coconut. Return to the tray and freeze for 1 hour. 7. Repeat this process with the remaining bars.
