CHICKEN TACO CUPCAKES

1 small diced chicken breast 1 small diced brown onion ¼ diced capsicum Handful of diced olives 2 sheets puff pastry 1 clove garlic Tablespoon of taco seasoning 1. Cook chicken, garlic and onion over a medium heat, for 10 minutes. Add capsicum, olives and taco seasoning and leave to cook until vegetables are soft. 2. Line a greased muffin tray with puff pastry and cook in a 200 degree oven for about 5 minutes or until pastry becomes lightly golden and rises. 3. Remove pastry from oven and spoon in the chicken mixture, return to over for a further 5 minutes or until the pastry is crispy and golden. 4. Top with salad of your choice, cheese, guacamole or sour cream.
