BANANA BREAD

This recipe is egg free and I made a vegan version of the banana bread using soy milk. Walnuts can also be added. • 2 cups plain flour • 3/4 cups white sugar • 1/2 cup dark brown sugar • 3/4 teaspoon baking soda • 3/4 teaspoon salt • 3/4 teaspoon cinnamon • 1/2 cup milk • 2 cups mashed banana • 1/4 cup canola oil • 2 tablespoons maple syrup • 1 teaspoon vanilla extract 1. Sift together flour, sugars, baking soda, salt and cinnamon. 2. In another bowl mix together milk, banana, oil, maple syrup and vanilla extract. 3. Mix in the dry ingredients, until just combined. 4. Pour into a greased loaf tin and bake in a 175 degree preheated oven for an hour or until a skewer comes out clean after inserted.
