BANANA AND CHOCOLATE SLICE

1/2 cup butter (or nuttelex) 1/3 cup brown sugar 2 1/3 cup rolled oats 1 teaspoon vanilla essence 1 heaped cup of chocolate chips (I used vegan, gluten, nut free chocolate chips, available from Coles and Woolworths) 2/3 cup peanut butter 1 banana, sliced 1. Combine butter and sugar in a bowl, microave for 2 minute, stir in rolled oats and microwave for a further 2.5 minutes. 2. Stir in vanilla, choc chips and peanut butter, microwave for 1.5-2 minutes. 3. Spread half the mixture into a greased or lined slice tray. Spread the banana slices over the top, then spread over the rest of the oat mixture. 4. Refrigerate for at least 3 hours, then cut and serve. NOTE: Can be frozen, if you're not a fan of banana it can be left out of the recipe :)
