BLUEBERRY MUFFINS

2 1/2 cups self raising flour 1 cup caster sugar 1 teaspoon baking powder 1/2 cup vegetable oil 1 whisked egg 1/2 cup milk 1 teaspoon vanilla essence 1 cup blueberries 1/3 cup maple syrup 1. Combine all dry ingredients in a bowl. 2. Add the egg, oil and milk, then mix until just combined and spoon into a greased muffin tray. 3. Combine the berries and maple syrup in a saucepan and boil for 3 minutes, before removing from the heat. 4. Spoon the blueberry syrup into the centre of the muffins and using a toothpick swirl the syrup through the muffin mix. 5. Bake for 25 minutes in a 180 degree preheated oven, or until the top just bounces back when touched. Note: You can use frozen or fresh blueberries for this recipe.
