QUICK AND EASY BANANA FRITTERS

2-3 mashed bananas 1/2 cup plain flour (I used gluten free) 1 tablespoon raw sugar 1 teaspoon vanilla pinch of salt 1. Combine ingredients in a bowl. 2. Heat oil in a pot or frying pan. 3. Spoon small amounts of the banana mixture into the hot oil and cook for a minute before rolling over to cook the over side. 4. Sprinkle with some cinnamon and raw sugar and enjoy! NOTE: You can enjoy these by themselves or serve with ice cream, custard, chocolate or caramel topping, or extra fruit. I served mine with soy ice cream, you could also try Sweet Williams vegan chocolate spread to drizzle over the top.
