TACO CUPCAKES

Beef mince 1 tablespoon minced ginger 1/4 capsicum diced 1 small tin corn 1/4 cup diced green onions 1/3 cup sliced black olives Salt and pepper 1 tablespoon ground paprika 1 teaspoon ground cumin seeds 1/2 tin crushed tomatoes 1 cup baby spinach leaves 3 tortillas (can use puff pastry or if you're gluten intolerant, use corn tortillas) 1. Cook mince, capsicum, corn, green onions and olives in a hot frying pan. 2. Add salt, pepper, paprika, cumin seeds, tomatoes and spinach. 3. Cut 3 small circles in each of the tortillas and push into a muffin tray to form a cup. 4. Fill each cup with the mince mixture and top with cheese if desired. 5. Cook in a 190 degree Celsius preheated oven for 20 minutes. 6. Serve with sour cream or guacamole and top with chopped tomatoes or lettuce.
