SWEET POTATO SPREAD

1 sweet potato 2 1/2 tablespoons of Greek yoghurt (I used plain lactose free yoghurt) 1/2 teaspoon of curry powder salt and pepper METHOD: 1. Boil sweet potato until soft. 2. Mash and then mix in yoghurt, curry powder, salt and pepper. 3. Spread on crackers and top with shallots if desired.
