BERRY CRUMBLES

FILLING 2 cups frozen berries (you can use any type you'd like) 2 tablespoons plain flour (can use gluten free) 2 tablespoons sugar (I used raw sugar) Pinch of salt Lemon zest (optional) CRUMBLE 1 cup rolled oats 4 heaped tablespoons plain flour (can use gluten free) 1/2 cup brown sugar 1/2 cup butter (or nuttelex) 1 teaspoon vanilla essence 1. Combine filling ingredients in a bowl and set aside. 2. Combine crumble ingredients in a separate bowl and rub butter into dry ingredients using your fingertips. 3. Spoon berry filling into a greased muffin tray then sprinkle the crumble over the top. 4. Bake in a 180 degree Celsius, preheated oven for 40 minutes or until the top is golden and the berry mixture is starting to bubble. Serve with custard, ice cream, yoghurt or enjoy them by themselves! If you want to stick with the dairy free theme, add some soy ice cream instead. Note: You can easily replace these frozen berries with fresh ones, however these are just as delicious and so much cheaper.
