POTATO SKINS

Large washed potato Grated cheese Bacon Guacamole Chopped shallots 1. Cook potatoes at 200 degrees for 25 minutes, then turn over and cook for a further 25 minutes. 2. While potatoes are in the oven cook diced bacon and set to the side for later. 3. Remove potatoes from the oven and cut off the top of each potato. Scoop out the inside leaving a shell and return to the oven to cook for a further 15 minutes. 4. Remove potato skins from oven, sprinkle a small amount of cheese in the bottom, followed by diced bacon, a scoop of guacamole and then shallots. NOTE: To make the guacamole mash an avocado, 2 tablespoons of lemon juice, salt, pepper, and garlic then mix.
